Candied Yams

Wash the skin of the yams, put in a pot, cover and bring to a boil. Let them boil at low heat until tender (about 25 min). Drain and cool with cold water. Remove from water and let drain on paper towel. Remove skin from the yam and slice lengthwise into a baking dish. Break up brown sugar over the yams (about 1/2 cup); cut up butter into small pieces over brown sugar and cover with marshmallows. Bake 350° for about 20-25 minutes until hot and marshmallows are golden brown.
